Chitosan is a polysaccharide composed more than 5000 units of glucosamine and acetyl glucosamine. According to NADFC decree: HK. 00.05.52.6581/2007, chitosan is classified as a raw material for food product. Chitosan expands easily and its solution is very viscous so it could be used as thickening, gelling and processing-aid agent.The aim of this study was to know the toxicity classification of chitosan. Acute toxicity test was carried out using 50 male and 50 female BALB/c mice, divided into 10 groups of each. Group I was a control group that were administered by vehicle solution of acetic acid 1% w/v, while group II, III, IV, V, VI, VII, VIII, IX, X were administered by chitosan solution in acetic acid 1% w/v in respective dosages: 0.42, 0.52, 0.66, 0.82, 1.02, 1.28, 1.60, 2.00, 5.00 g/kg body weight.The result showed that chitosan consumption until 2.0 g/kg body weight in male and female mice did not cause any clinical toxicity signs or decrease the body weight. In dosage of 5.00 g/kg there was 1 female death otherwise males were survive until the end of the study. Moreover, there was nothing disorder on macro pathological observation. Therefore, from this study it could be estimated that LD50 value of chitosan is more than 5.0 g/kg body weight so chitosan can be classified into practically non toxic.
