The research was carried out to demonstrate that galangal (Alpinia galangal L Swartz) has antimicrobial activity to prolong the storage time of Rastrelliger sp. The effects of galangal powder (water extract); the concentration 2.5, 5.0 and 7.5% was studied during storage at 4oC. The result showed that 2.5% galangal powder combination with 5% salt was the most effective treatment. The treatment can prolong the storage time up to 7 days compared to 5 days control.
