[abstrak] PEMANFAATAN LENGKUAS (Alpinia galangal L. Swartz) UNTUK MEMPERPANJANG MASA SIMPAN IKAN KEMBUNG (Rastrelliger sp.) (THE EFFECT OF GALANGAL (Alpinia galangal L. Swartz) ON THE QUALITY OF FISH (Rastrelliger sp.) DURING STORAGE)

The research was carried out to demonstrate that galangal (Alpinia galangal L Swartz) has antimicrobial activity to prolong the storage time of Rastrelliger sp. The effects of galangal powder (water extract); the concentration 2.5, 5.0 and 7.5% was studied during storage at 4oC. The result showed that 2.5% galangal powder combination with 5% salt was the most effective treatment. The treatment can prolong the storage time up to 7 days compared to 5 days control.
